With more than twenty years in the hospitality industry, from pubs and restaurants to board-level consulting, I work with organisations and operators to improve how their catering businesses perform.
Today I advise the UK's most iconic parks, work with independent cafés and food businesses, and write about the industry for operators who want to do things better.


I've worked in hospitality continuously since 2004, but my first real taste came after school, working behind the bar and waiting tables. That's what got me hooked. I've always felt there's something meaningful about making the places people choose to spend their free time in as good as they can be. It's where they make memories, spend their best hours, and feel most like themselves. Being part of that is a responsibility, but also a privilege.
Since then, I've worked across the industry, from independent cafés and pubs to large visitor attractions and public spaces. My path has taken me from running small teams to advising senior stakeholders and shaping how organisations approach their catering.
Today I run Coffin & Co Ltd, working across the public, private, and charitable sectors. I'm also building a library of content and tools to help operators do better work and enjoy it more. I care deeply about hospitality as a career and want to do what I can to make it a better, more sustainable place to work. Part of that is showing what's possible. Part of it is highlighting the people who make it happen.
